Chef's New Recipes

Makes about 1.5 cups
Ingredients
½ shallot thinly sliced
1 clove garlic thinly sliced
2 sprigs fresh thyme
¼ cup dry white wine
1 8oz block cream cheese (cut into 8 squares)
6 oz quality blue cheese (crumbled)
½ cup heavy cream
kosher salt and freshly ground black pepper (to taste)
Method
In a small sauce pot combine shallot, garlic, thyme, and wine.
Reduce over medium heat by ¾.
Add cream to pot, and reduce by half.
Turn heat off add cream cheese, whisk until smooth.
Add blue cheese and whisk until incorporated, but still a little lumpy.
Adjust seasoning with salt and pepper.
Keep warm in pot, or serve immediately.
Serving suggestions
Serve this awesome fondue with french fries, over potato chips, or drizzle over steaks and chops.
